Gluten-Free Diet

A gluten-free diet can be difficult, but it can also be a miracle for people with celiac disease or gluten sensitivity. These are conditions triggered by eating gluten, a protein found in wheat, barley and rye. Many Americans on gluten-free diets have not been diagnosed with celiac disease or gluten sensitivity. People with celiac disease or gluten sensitivity may feel better from eating only gluten-free foods. However, there is no evidence that those without these conditions benefit from not eating gluten. In fact, a gluten-free diet can lack essential nutrients. Most gluten-free products are not fortified with vitamins — most importantly folate — and fiber like other breads and cereals are in the US. Talk to your doctor before going gluten-free if you think you have celiac disease or gluten sensitivity.
