Kale

Despite being a newcomer to the health foods scene, kale has emerged as a superstar for good reason. According to the AARP, kale is rich in vitamin A, which may benefit the immune system and even protect against some forms of cancer. Kale also has the potential to help out your eyes with its high lutein content. Furthermore, kale is extremely rich in vitamin K, which has been linked to improved disease activity in patients with rheumatoid arthritis. The AARP does warn that eating too much kale could interfere with blood thinning or anticoagulation medications due to the role vitamin K plays in blood clotting.
